Recipe of the week


2 red onions

1 red pepper

2 carrots

3 celery sticks

4 cloves of garlic

2 tbsps of chilli powder

2 tsps of cumin

2 tsps of paprika

1 tsp of oregano

2 cans of red kidney beans

1 can butter beans

1 can chopped tomatoes

2 cups of vegetable stock

3 bay leaves

2 tablespoons of fresh coriander#

Lime juice to taste



Heat some oil in pan and add the onion, pepper, carrot and celery. Stir until softened about 10 minutes.

Add the garlic, chilli, cumin, paprika and oregano. Cook for 1 minute.

Add the tomatoes, beans and butter beans, vegetable stock and bay leaves. Reduce heat and simmer for 30 minutes.

Add the coriander and lime juice and garnish with grated chedder cheese.
