Recipe of the Week

You will need:

Olive oil

1 onion

1 pepper

1 tbsp cumin

1 tbsp chilli powder

1 tbsp paprika

can kidney beans

can mixed beans or pulses of your choice

can chopped tomatoes

2 cauliflowers


To make:


Put oil in pan and add onion and pepper. Cook until soft.  Tip in spices and cook for 1 min.


Tip in the beans (I use chick peas and butter beans with the kidney beans) and tomatoes and bring to boil then simmer for 15 mins until chilli has thickened.

Whilst chilli is cooking grate 2 cauliflowers - just use cheese grater. Microwave for 4 minutes for each cauliflower and add come coriander.  Serve as if it was rice!
