Recipe of the week


Pork chops

Sweet potato

2 red onions

1 green pepper

Olive oil

200g cherry tomatoes

1 lime

For the glaze:

30 ml red wine

2 cloves of garlic

2 limes juiced

Fresh mint

Cayenne pepper

2 tbsp honey

Olive oil



Whisk the glaze ingredients and pour  half the glaze over the chops and leave to marinate for 30 mins

Pre heat the oven to Gas Mark 5 and line a roasting tray with tin foil.

Put sweet potato , onions and peppers in a bowl. Add the oil and toss to coat the veg. Transfer to the tray, together with the pork chops, tomatoes and limes.  Season then bake for 30 mins.

Drizzle over the reserved glaze. Return to the oven for a further 10 mins then serve.
