Recipe of the week

Ingredients:

Half a kilo of mussels per person

1 tbsp butter

1 leek

1 cup of wine

Half a cup of single cream

4 tbsps of parsley

 

Method:

Melt butter and add 1 chopped leek and fry for 3 minutes.  Add mussels and wine. Cover and simmer until mussels are open, about 4 minutes. Remove mussels with slotted spoon. Stir in cream and 2 tbsps of parsley. Simmer uncovered for 3 minutes. Season. Pour over mussels and sprinkle with remaining parsley.
