Recipe of the week

Ingredients:

small piece of ginger

2 fresh red chillies

8 tbsp olive oil

4 tbsp balsamic vinegar

4 tbsp soy sauce

noodles

2 carrots

1 cucumber

2 iceberg lettuce

1 gem lettuce

fresh mint

leftover lamb

1 tbsp sesame seeds

 

Method:

Peel the ginger and grate with half the chilli into a bowl. Add the oil, vinegar and soy sauce to make a dressing.

Peel the carrots into long ribbons, slice the cucumber and put into salad bowl. Trim the lettuces and cut into random wedges and place on top of the carrots and cucumber. Put over the mint leaves.

Place lamb in a wok and fry on high heat with the sesame seeds and noodles until lamb is nice and crispy.

Mix up the dressing and drizzle  it over the salad bow and toss together until well coated. Finally slice the remaining chilli and scatter over, then top with the crispy lamb and serve right away.
