Recipe of the week (1)

Ingredients:

Potatoes

Parsley

4 plaice fillets

1 lemon

Olive oil

2 tbsp plain flour

25g butter

 

Method:

 

Boil potatoes in water for 10 minutes our until tender. Return to the pan and roughly crush with fork. Season and stir in 2 tbsps olive oil and handful of chopped parsley.

Season plaice fillets and dust with flour. Heat olive oil in a frying pan over high heat. Add fish skin side down and cook for 2 minutes. Turn over and cook for further 2 minutes.

Melt butter in pan, stir in juice of half a lemon, parsley and seasoning. Drizzle over plaice and spoon the potatoes alongside. Serve with remaining lemon and peas.
